Bright, beautiful and with a light spring meadow, the collaborative efforts of Monnik and Montseny brewers land them at the foothills of the Belgian lowlands. Its fruity and spicy taste is layered with a deliberate overcase of elderflower.
Sauc Monkey pours a honey amber hue with surprisingly bright clarity. Its frothy off white foam is laced with the tartness and floralness of the flowers along with the beer's natural citrus and orchard fruit, and its yeast spices. To taste, the beer comes across honey-like with biscuit, nutty and toasted savory flavor.
As the beer blooms on the middle palate, its sweet honey flavor lifts just enough to allow for the fruit, spice and tanginess to steal the show. Pear, orange, cantaloup, apple and lemon play counter to an herbal spiciness of fresh grass, peppercorn, cinnamon, and cumin. Surprisingly, the final pep of elderflower leaves its floral character behind and makes the beer bright, tart and almost berry-like and sour. Rose wine follows along with a zesty carbonic bite.
Medium bodied but trending dry and lighter, the beer's robust honey character leaves an impression on finish that's akin to peanut skin, bread crust and cashew. Herbal sassafras and cedar follow while the beer's spicy sourness lasts medium long in aftertaste.
