The benefits of running a negative split - a slow first half and a fast second - are purely positive. Same holds true for this sophisticated seasonal brew. We added fresh local chocolate from Moonstruck Chocolate Co. to this already chocolaty stout, then heaped in whole vanilla beans from Singing Dog Vanilla for big, rich, complex flavor.

Just had this afternoon at the brewery, pours a dark brown color with a decent head that is off-white. The aroma is roasted malt and vanilla with a little chocolate. Taste is similar to aroma with more roasted malt flavor and a smoother. Very easy drinking for a Stout with a mild mouthfeel. 30 IBUs Rated 12-14-2024

Fairly good amount of sustaining, light brown head. Cannot see through the nearly black, auburn highlighted, brown look. Nearly sweet, mellow, medium heavy toasted grains, for the aroma. Sharp and bitter, dark roasted grain flavor, that has a near smokiness and bitterness, to the end.

Poured from a growler into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque in the glass with a thin light khaki head that dissipates to patches with slight lacing. Aroma of dark toasted malt with light char, unsweetened chocolate and a hint of vanilla. Flavor follows aroma with a semi-dry toasted malt base with some light smoky char, semi-sweet, high cacao chocolate, a hint of vanilla. Finishes with light char, chocolate and a little coffee as well as a slight hop bitterness. Medium bodied with light creaminess. A nice chocolately stout with a good balance in malt, char and chocolate. Finish has a nice bitterness that tasted both like hops or coffee beans. Pleasant introduction to this brewery.
