A unique beer made by giving fresh wort to some wild yeast from last year. After almost a year of slow fermentation, in August we added whole plums to the beer in a ratio of 1/4, and further matured it on plum wood chips. The foreground of the taste of this drink is softly dry, where the sweet smokiness of roasted plum wood chips intertwines with the smell of lightly dried plums. This sweetness is well balanced by the spiciness of wild yeast esters and light acidity, which gives the drink a pleasant stewed fruit feel without the characteristic slippery mouthfeel.

Pours a cloudy, depp, dark golden amber coloration with a small, fluffy head. Smells of doughy malt and plums, with a strong woody, slightly smokey note and hints of estery spice as well. Taste is a great balance of doughy malt and sweet, slightly tart plums, with a strong woody, slightly smokey presence and hints of estery spice, with notes of clove and nutmeg as well as some funky accents. Finishes with a medium tartness and some plums and woody, smokey notes lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
Just like with their cherry Wild Ale, I love the combination of fruit and woody, smoked notes, resulting from adding roasted pits. This one is actually abit heavier on those woody, smoked notes and not quite as vibrantly fruity as the cherry version, but still very nice. Those estery spice notes fit in very well here, rounding out the flavor profile nicely along with subtle, musty funk and a good underlying tartness. Overall, I enjoyed this slightly less than their excellent cherry Wild Ale, but still liked it a lot.
