A blended spontaneous fermentation ale brewed in the Belgian tradition. Since 2019, we are the only brewery in the Baltics to actively operate a coolship, and part of this wildale started off in that pre-plague and pre-war year. Blended with younger spontaneous fermentation ales from years 2020 and 2022. The aim of this Belgian method from beginning of 19th century is to weave the richly mossy and rustically spicy flavours of an older wildale with the refreshingly spicy elements of a younger wildale. Intended for immediate processing or longer maturation.

Pours a cloudy, deep amber coloration witha small, fluffy head that soon fades to a thin ring inside the glass. Smells of doughy malt and fruity, slightly spicy esters, with notes apricot, apple and clove, as well as hints of moldy funk also coming through. Taste is a great balance of doughy malt and fruity and spicy esters, with notes of apricot, red apple, plum, gooseberry, clove and nutmeg, herbal accents of tamarind and rosemary, as well as hints of honey and moldy, cheesy funk also coming through. Finishes with a light sweetness and tartness, as well as some apricot, clove and moldy funk lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
This was spontaneously fermented in a coolship and blended from different ages, so is essentially a Gueuze. A nice one too, I have to say. Not that funky, despite hints of moldy funk, but with some vibrant fruity and spicy esters and herbal accents that form a really nice balance here. There are hints of honey as well, lending a certain, but not overbearing sweetness to this, while the tartness is rather light as well. Overall, this makes for a really nice Wild Ale with a good balance of fruity, spicy, herbal and lightly sweet, tart and funky notes.
