At the beginning of the year we brewed a crispy dry cherry mead, which we aged for a little more than half a year in bourbon barrels that had already hosted a Fiji rum as well as our stout. Cloves and nutmeg from the rum cask are the first to emerge on the sensory horizon, which fit snugly with the soft sweetness of smoky cherry wood chips and a touch of cherry sourness. Already on the tongue, the cherryiness bursts to the fore for a moment, only to slowly subside into the southerly spicy notes of rum in the aftertaste.

Pours a cloudy, deep ruby red coloration with a small, fizzy head that fades away quickly. Smells of tart cherries, spices, with notes of cinnamon and nutmeg, as well as hints of vanilla and honey. Taste follows the nose, with a great balance of tart red cherrries, spices, with notes of cinnamon, nutmeg and clove, lighter honey and just a hint of vanilla and oak. Finishes with a light tartness and sweetness, as well as some cherry, spices and oak lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
The red cherries stand out quite vibrantly here, offering both tartness and sweetness, while the rum barrel brings a surprising amount of spice to the table, with traces of the bourbon barrel also evident, mainly showing hints of vanilla. This is complemented by subtle honey and oak notes. Overall this makes for quite an enjoyable example of the style that's quite rich and shows off the barrel-aging very nicely.
