Sour IPA
Organoleptic manifestation of Baudrillard's simulacrum. A sharp citrusy aroma of Idaho7 hops, complemented by the primal bitterness of wormwood, literally hits the nose. Thanks to Philly Sour yeast the beer has a juicy acidity that, together with the wormwood and hops, creates a pure simulacrum of a grapefruit. With all the refreshing aftertaste and gentle astringent effect.

Pours a cloudy, golden amber coloration with a small, fluffy head. Smells of light doughy malt, citrus zest, wormwood bitternes and a certain acidity. Taste follows the nose, with a great balance of light doughy malt, and strong, quite zesty and bitter citrus notes from the hops and wormwood, as well as hints of pine and a great, underlying acidity. Finishes with a medium/strong bitterness and acidity, as well as some citrus zest lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
This makes for a very nice Sour IPA that is quite zesty, bitter, resinous and acidic, with a great balance of these elements that work together quite well. The wormwood comes through marvellously here, really giving this that bitter and zesty kick in combination with the Idaho 7 hops, adding citrus notes and bitterness of their own, as well as hints of resinous pine. Since there is mention of this containing lactic acid, the acidity seems to mainly come from the Philly Sour yeast, which is quite interesting to me, although the wormwood possibly has a hand in this as well.
