500ml bottle at share. Dark golden, hazy pour, small airy head. Light aroma, funky, savory, floral. Taste is mildly tart, limes, herbal, savory. Light on the palate , soft.

Bottle: Poured a golden/orangey color ale with a large white foamy head with good retention and some lacing. Aroma of tart notes with some vinous funky ester notes and light herbal notes. Taste is also a mix of tart notes with some oak and vinous notes also noticeable with a faint but discernible mix of sage. Body Is about average with good carbonation. Well balanced wild ale with plenty of complexity and a good level of drinkability.

750ml bottle. Label has best by date of 10-10-2032, which is ten years away from the bottling date of 10-10-2022. ABV% is 7.1%.
Cloudy, deep gold colored body. Brief fizzy head results in a small island and a ring. Leaves behind a few scattered spots of lacing.
Aroma is woody with a definite sage smell. Smells wild.
Taste is sublime, with a mix of oak, wheat, lemon, lime, and sage. Mellow grassy and hay funk. Short aftertaste.
Soft mouth feel, with a degree of nectar. Stays wet, although the flavors dissipate quickly. Good carbonation.
Very balanced with flavors and feel. Well made.

This my 1000th beer and also my first Tommie Sjef one. Been cellared since March and saved for this special occasion. Poured into a special stemmed Zalto Universal glass.

A: Body is coppery to light orange, crystalline, showing a white head that vanishes very quickly. There's no lacing nor retention but as a lambic-inspired beer, expectations on the head aren't very good. The color is striking though with a very good looks.
S: It's highly aromatic being flowery and lightly critic, having a backbone of a light horse blanket and mild acidity. It's more like a saison than a wild ale as this is seems to be very very soft in terms of acidity and specially how it all blends together.
T: Taste starts off with a herbal, almost flowery with notes of chamomile, sage tones with a lemon peel or light tangerine touch. I'd go as far to say that it resembles a light, chardonnay profile with such a rounded pretty integrated different tonalities. There's a light and refreshing acidity that's not overpowering and the bitterness is mild to provide an extra kick.
M: Body is light. Carbonation is medium low. Alcohol is unnoticed. Acidity is mild and bitterness is medium low.
O: This is a GREAT lambic-inspired beer as the flavors are pretty well integrated in a beautifully made beer. Eager to try out more from Tommie Sjef and very happy to have this beer as my 1000th unique beer.
