Bourbon barrel aged stout with toasted coconut. Stored in Old Weller Antique barrels for 9+ months.

This one pours a dark black color, with a small head, and a little bit of lacing.
This smells like sweet toasted coconut, coconut milk, vanilla, oak, caramelly bourbon, dark chocolate, and toffee.
This is absolutely excellent stuff. The coconut is done so well, definitely sweet, but not overwhelmingly so at all. There's some good barrel here - a touch of oak spice, vanilla, caramel, etc. The base beer (Gravity?) is super chocolatey, but also with a touch of toffee/nougat/caramel.
This is really creamy, and rich, with a medium body - not too thick, not too thin, just right. There's really not much booziness for how strong this is.
I continue to be really impressed with Ellison so far. This is as good as it gets for coconut stouts.

Rich chocolate, coconut, licorice, smooth and thin, nice boozy barrel, good balance of roast and bitterness. Not normally a big stout guy but this is really nice.

Had on tap. Viscous jet black body with no head. Hello coconut! The nose hits you with it right away with big bourbon vanilla, and chocolate, with almond, oak and char in the background, could be an air freshener. Taste is also a coconut bomb, but does it in enough of a non-sweet way that it does not cloy. That being said the underlying stout is decently sweet with the dark chocolate, vanilla, toffee, and nougat, but the oak, slight char, bourbon, and a kiss of dark fruit bring the sweetness to heel. Feel is syrupy, thick, and heavy. Amazing first offering from this brewer

A - Pours pitch black with a thin tan head. Decent amount of sticky lacing.
S - Aroma is huge coconut, dark chocolate and vanilla.
T - The taste follows the aroma. Huge coconut, vanilla, dark chocolate, caramel, oak and bourbon.
M - Full body with low carbonation. Syrupy mouthfeel with a soft dry finish.
O - Simply awesome. Huge coconut flavor throughout. Taste like a bourbon soaked almond joy.
