Served in a snifter

This beer pours black and is topped with less than an inch of dark brown head that leaves scant lacing.

Chocolate and caramel and nutty aroma. I actually get some booze too.

Chocolate and caramel with a nutty finish

Full bodied with a smooth, thick, creamy mouthfeel

The whole One, Two, Three series has been great!

A - Pours pitch black with a thin tan head. Light soapy lacing.

S - Aroma is honey, dark chocolate, vanilla, pecans and bourbon barrel.

T - The taste is honey, dark chocolate, cinnamon, vanilla, oak and a lingering bourbon heat.

M - Full body with low carbonation. Syrupy mouthfeel with a slick drying finish.

O - Honestly this was better than I expected. The sweetness plays nicely with the barrel.

This one pours a very dark black color, with a small head, and not much lacing.

This smells like boozy honey, cinnamon toast, milk chocolate, vanilla, oak, and bourbon.

There's a bit of spice here, but no overt baklava type flavors - I don't really get walnuts, but I do get a sort of breadiness that could be baklava dough? There's a ton of honey, though - boozy, sweet, and rich. It tastes pretty good, but this is definitely leaning towards too sweet overall. There's not enough barrel character to temper that boozey honey sweetness.

This is thick and syrupy, with a hint of booziness, and not much carbonation.

This wasn't my favorite execution of barrel aged stout from Ellison, but it was an inventive idea and it was fun to try.
