The fact that this non-cellaring beer was purchased in 2021 and is only being drunk in October 2022 says a lot about my beer-collecting problem. From the International Beer Collector December 2021 subscription pack.

The beer is a deep golden colour, with an orange-tinged, white head. There is a lot of sediment hanging motionless in the glass like a yeast-filled constellation. Full disclosure: this is because I'm stupid and poured a bottle-conditioned beer without paying attention. Visible carbonation is minimal.

On the nose, there's spicey Belgian yeast, sweet malt, stone fruits and vanilla. It's quite an enticing aroma.

The taste has apricot, a hint of cloves, fruity and spicey Belgian yeast characters and the slightest touch of booze. The fruit turned citrusy as the beer warmed, and became quite tangy. Bitterness is restrained at first despite the listed 45 IBUs but did become more pronounced as the beer warmed.

Mouthfeel is smooth, with minimal carbonic prickle. The booze sits nicely in the stomach with a mild warning effect.

Overall, this is listed as a pale ale but drinks like a tripel with that spicey and fruity Belgian yeast profile and the fruity, apricot/citrusy vibe that it showed throughout. It came into its own as it warmed and became an enjoyable beer. It's one of those beers that scores higher than the sum of its parts due to them all working in harmony to produce a great beer-drinking experience. Nice job!

Yields a clear amber color with a big, stable white head atop.

Smells of spicy yeast, fresh baked bread and faint citrus zest - pretty muted actually and not what I expected from an IPA.

Has a well carbonated, sprizzy and refreshing lighter body together with a well working balance.

Tastes of spicy, cardamom heavy yeast, dry and earthy noble hops and a well pronounced malt sweetness, which gets highlighted by cloves and cinnamon. Turns a little more rustic then, numbing down the prominent sweetness in this while creating a more subtle whole grain bread flavor with just a lighter note of grassy hops underneath. Finishes with a lasting dry punch among gingerbread spices, creating an unusual, peppery finish.

This isn’t appealing at all, it’s spices are simply overly pronounced, distracting from the hops pretty effectivly.
