ive been wanting to try this one, seems like it is the hardest to find of the three, did it come out last? i couldnt believe how affordable it was at their garden city location for a bottle for on site, so i had to jump in. its rather clear until the bottom inch or so, holds a dense white inch of head, and fizzes pretty aggressively, pale straw colored brew with a little honey tone to it, nice looking saison. the nose is more cereal dust than funk, a little tartness there too, and simple from a grain standpoint, seems like white wheat malt and little else, the simple nature of the beer is appealing through for this series, as i think it allows the specifics of the brett strain to show themselves, although this smells just a little immature to me. the flavor is certainly yeast forward, the brett seems slow developing, it is more funky than it smells and less tart, light lemon still though, definitely the farmy side of brett, wet animal and hayloft and that sort of thing, white wine character too in the ferment, summery, rustic, but also this isnt quite done evolving, not sloppy, but not complete either, and while i appreciate it, especially at this price, i also think it will probably continue to improve. the brett is just a little sweaty still. i like all the carbonation, i love the price, and its cool to see these guys keep pushing, they easily are the most ambitious operation in town.

Pours a golden orange with as much head as you want from it. Eventually settles down to leave no lacing behind. Bright lemon curd and vanilla pop on the nose, followed by more hay and traditional farmhouse esters. Zesty and moderately dry, with a bit of chalkiness.
