spontaneous ale in bourbon barrels with peaches, this should be so much better than it is! whether spon or sour, everything has been coming up bracingly acidity here of late, and im not sure the base beer here is all that good, its acetic and sharp and it hurts my teeth, very little wild yeast funk to it, brett, any of that, its just acid. the base beer also smells and tastes unflatteringly old, like they made way too much of it a long time ago and its been getting used and dosed and blended into things for too long, probably time to cut losses if thats the case, there might not be enough bourbon or peach in the world to turn it into truly excellent beer, not trying to be mean, its just like for all the flavors and everything here, the bases for these seem more or less the same, and its not great. i also think they may be reusing barrels or something, as this has not all that much bourbon character to it, it doesnt smell or taste freshly emptied, the richness of the whiskey, vanilla, barrel char, toffee, maple, none of that is here, or its too subtle to make it through the acidity, a shame. the peaches pop though, seem authentic, real fragrant, a bit sweet in the flavor which is nice with how sour this is, and they really save it for me. i think the idea is awesome, i dont love the execution. its boozy in a way that doesnt enhance the flavors, its not particularly well carbonated, and overall i know these guys can do better than this. its better than im making it sound, and from other breweries id say sure, but i expect more from barbarian...
