Sotol is a North American desert plant of the agave family, used to make a distilled spirit very similar to tequila. We aged this Saison with brettanomyces and agave nectar in Sotol barrels from a distiller in West Texas that specializes in these spirits

Taster at Barbarian Garden City. Cloudy pale golden pour, ring of fine head. Strong agave aroma. Taste balances the agave with notes of lime and the Brett. At first impression it's tequila, but is really more complex than that.
