It's the most wonderful time of the year: hops harvest.
With our friends at Hop To It we're sending this one out as a lover letter to hops. We've done a LOT of playing around over the years with different techniques and processes in order to try and extract just as much hop juiciness as we possibly can. And once a year we get to play around with the ripe stuff in all its prime and glory.
We're also trying something new, which we've never done before: matching a juicy fresh hop with an aroma-and flavour-full double dry hop. Pairing the fresh Centennial and Columbus with some Galaxy and Azacca and into a big Double IPA.
The hops were harvested with our help on Saturday September 12, 2020 and were into the mash tun (we're using a special technique) a mere 6 hours later. We hope you'll taste this and continue your love affair with hops as we have.

Appearance - Pours a clear gold with three fingers of frothy white head.
Smell - citrus, piney, earthy, leafy, and weedy hops, pine resin, mango, pineapple, grapefruit peel, citrus rind, bready malts, caramel, and earthy yeast.
Taste - citrus, piney, earthy, leafy, and weedy hops upfront. The pine resin, mango, pineapple, grapefruit peel, and citrus rind follow suit. The bready malts, caramel, and earthy yeast round out the brew.
Mouthfeel - Medium bodied with moderate carbonation. Finishes sticky with the hops lingering.
Overall - A solid DIPA that is a dangerous sipper. The ABV is well hidden in this one. Glad I picked up a couple of cans at a local Co-op here in Cowtown!

Clear pale golden pour with finger of short lived white head.
Aroma tropical - mango, pineapple, cereal malt, slightly sweaty, dank - piney hops.
Tastes of moderately sweet grainy cereal malt, mango and pineapple; resinous, piney - just a touch of diesel booziness that integrates well.
Full mouthfeel pushed by the boozy, sticky resinous nature rather than the somewhat restrained fading carbonation that warms the palate while remaining smooth and drinkable.
Honestly reminds of Bells’ Hopslam.
2021 version - updated rating - wonderfully stick sweet, caramel, deeply resinous, slightly dank and sweaty - over ripe tropical fruit and and a delicious earthy bitterness. Not sure if this is legitimately better than 2020 version or I just felt it at the moment. Great.
