Saisons are some of our favourite beers to barrel-age. The yeasts we use for saisons lend themselves to prolonged ageing and oak flavours. They are dry and fruity and appreciate a higher carbonation level. They are just as happy being hopped as they are in spirits barrels or in mixed fermentations with Brett or other funky organisms. The roads you can travel down with saisons are just as windy and forked as the roads you can travel down with ale yeast. We hope you’ll enjoy the road we are taking you down with this one.
For this barrel-aged saison we’ve used Saison Lacombe: Printemps as our base and aged it in used red-wine barrels that previously held some of our Brett beers. This beer was on wood for 489 days and is a blend of 3 barrels.

Not sure on the age of this - probably closing in on three years as think 2018 fall release. Had in taproom back then, now aged bottle.
Pours a bright slightly hazy yellow to golden with short lived half finger of tight bubbly white head.
Yeasty, funky nose - doughy malt with fruity notes - apple, pear, a bit of a vinous aroma.
Taste is funky and fruity - apple, pear, yeasty with a crisp tartness without being sour - lemon, lemon grass, generic citrus, notes of wood and vinous flavour.
Medium mouthfeel with moderate carbonation that appropriately tingles the palate - crisp funky and slightly tart finish.
Honestly wish I had another to try in a year or so.
