Saisons are some of our favourite beers to barrel-age. The yeasts we use for saisons lend themselves to prolonged aging and oak flavours. They are dry and fruity and appreciate a higher carbonation level. They are just as happy being hopped as they are in spirits barrels or in mixed fermentation with Brett or other funky organisms. The roads you can travel down with saisons are just as windy and forked as the roads you can travel down with ale yeast. We hope you'll enjoy the road we are taking you down with this one.
For this barrel-aged saison we've used Saison Lacombe : Noir as our base and aged it in used bourbon barrels that previously held some of our porters and imperial stouts. This beer was on wood for 324 days and is a blend of 4 barrels.

Dark brown with reddish highlights on the pour - tight bubbly khaki coloured finger of head.
Aroma is a mildly funky fruity; berry notes, slightly woody and earthy.
Fruity with some dark fruit on the palate, slightly yeasty with a touch of funk and a hint of earthy bitterness.
Medium mouthfeel with moderate carbonation and a smooth dry finish.
