We brewed this one with our favourite people out of Guelph, Ontario -- Escarpment Laboratories. They were looking at doing some figurin' and reckonin' on a new strain of Brettanomyces that they'd isolated and needed a dance partner to do some real-world experimenting with. They came on down in the spring to brew with us, talk shop, and spread the gospel of funk here in Alberta. It was a good day.

We fermented it on their New World Saison and their newly minted Brett. M. We hope you don't mind being our guinea pigs on this one. Feel free to reach out and let us know what you think of it. Beer drinking in the name of science or something like that....

Disclaimers: Not sure Brett and funk is my thing; aged bottle - I labeled as November 2019 - so 3+ years in my cellar. 500 ml bottle.
Pours a cloudy/hazy yellow golden with some particulate from the dregs - three fingers of puffy white head. Product wanted out as soon as I popped the cap!
Aroma hits with funk - yep Brett involved! Fruity - pear, apple, a bit of peppery spice, juicy fruit gum, a band aid note and some fresh white bread
Fruity and sweet up front on the palate - again apple, pear; bready malt; definite funk with a peppery spice - a touch of acidity/tartness with a funky bitterness - Brett is on board.
Bright medium mouthfeel - brisk carbonation with a crisp fruity, funky finish.
I believe this to have been well done and frankly age did not bring out anything off, but simply style (Brett) would not be my go to... (fair question - why did you buy it? present me smarter than past me.)
