Work vs. play. Wild vs. controlled. Thinking vs. feeling.
And with this foeder-aged Doppelbock - taking a queue from the monks of Munich and their love of big, bold beer - the old world and the new world. The monks named their Doppelbocks, Salvator after their saviour. And we, and many others, continue that tradition by naming ours with the suffix -ator.
Modern equipment, recipe design, and ingredients. Paired with the time-lost process of long maturations in beautiful, air-dried white oak foeders. Showing the balance between the true craftsmanship of 1140 board feet of finger-jointed wood staves and the true science of our brewing lab. Allowing us to reinterpret revered classics without hewing to traditional nonsense. Giving us the freedom to strive for a simple truth: "whatever serves the beer best".
Something well executed, well lagered and, well, delicious.

Pours a clear deep mahogany colour with finger plus of tawny beige head - very inviting.
Nose is malty - brown sugar, bread, caramel with hints of chocolate and a bit of a roasty coffee aroma; some notes of dark fruit.
Tastes of fresh bread, brown sugar, toffee like malt - hints of dates; chocolate and again a sweetened coffee roast note - sweetness balanced by the soft roasty bitterness.
Smooth medium full mouthfeel with moderate carbonation; great food pairing beer!
Only complaint - drop the soliloquy of a somewhat pretentious sounding lesson on the can....
