There is something special about oak barrels and the art of making them. The natural inherent beauty of them. The rich aroma of a room filled high with them. The flavours they impart that are impossible to replicate. The imperfections and the labour of handling them. The unknown and then risk of failure.
Each barrel that this Brett. saison was aged in was assembled by hand - using a technique that has been nearly unchanged for hundreds and thousands of years. A trade that needs strong hands and backs and an eye for picking the right logs; without too many burls or knots or scars or timber streak.
We hope you'll enjoy this marriage of our craft and the melange of French and American oak barrels from various cooperages - and the craft of the unknown and honoured coopers who built them.

Purchased October of 2020 in the heart of COVID from the brewery in Lacombe, AB. 500 ml bottle.
Essentially clear golden coloured pour with scant fine rim of white head. Poured ~ 12 ounces, so left dregs behind.
Funky on the nose - clear Brett with a fruity floral background - notes of acetic acid and a bit of citrus/lemon.
Sweet up front on the palate - funky and fruity with a building tartness - lemon, pear - hint of oakiness.
Bright and tingling carbonation on a light medium body - lingering funky tartness with a dry finish.
And yeah Brett here but perhaps it’s just better than I have credited or I am evolving.
