Enjoy this very special one, and see if you can draw out all the previous inhabitants of this barrel, the Kaiun sake, the gin from Strathcona Spirits, and the learned toil of untold numbers of brewers over millennia.

Single 500 ml bottle from brewery, split two ways.
Pours a dark brown colour with a half finger of creamy tan head that happily returns with each gentle swirl.
Nose starts with notes of the spirit barrel - gin - (got to be honest, never had Sake, so not sure I could identify - hell, never really had gin either, just previous gin barrel aged beers), dark fruits, raisin, a hint of cherry; toffee with some bready malt.
Dark fruit sweetness with bready malt on the palate, a touch of molasses, toffee, and a soft Belgian yeast flavour.
Medium full mouthfeel with a remarkably smooth and creamy finish and little evidence of the 10% ABV.
This was very enjoyable though would suggest flavours don’t perhaps pop as would expect - a work in subtlety.
