For this version of Barrel of Funk we took Barrel of Monks Belgian Dubbel, added our mixed culture of wild yeast and bacteria and then aged in Rye Whiskey barrels with organic plums and figs for 8 months. This beer was then blended with a touch of Wild Baltic Porter aged in Rye Whiskey barrels for 16 months, and some Wild Stout aged in Marsala wine barrels for 12 months. This blend is full bodied and luxuriously smooth with prominent American oak vanillin character and soft French oak tannins. Bakers chocolate, rye whiskey, red wine, and dark sour fruit notes are all present but balanced

Don't know how all these delicious sounding styles, ingredients and barrel aging techniques end up tasting sour, but they sure do. Not at all what I was hoping for.

On tap at the brewery. Black body with a khaki head. Smells of chocolate malt, light red wine acidity, some dark fruits. Tastes of dark fruit, red wine acidity, some chocolate, lots of oak. Lingering sourness. Medium body. More sour than malty. It's not bad, but not great.
