Collaboration with The Tank Brewing Co.
We made this Wild Oktoberfest Lager with our friends at The Tank. We brewed a traditional Oktoberfest Marzen with Vienna, Munich, and a touch of Melanoidin malt. After fermenting and cold lagering in stainless steel with a traditional German lager yeast, we transferred the beer into one of our large French oak puncheons inoculated with our house culture of wild yeast and bacteria, and aged for 11 more months. This beer pours deep amber and is full-bodied with smooth toasted malt flavors of fresh baked bread, and notes of herbal hops. Our French oak puncheons lend tannins and subtle oak while our mixed culture adds light acidity and a Brettanomyces finish.

On tap at the brewery. Murky amber body with a full khaki head. Smells of bready malts, a little bit of fruitiness, oak, and some light yeast funk. Tastes a little tart up front, a bit of a vinous acidity. Nutty malts and some earthy yeast behind it. A little bit of bready brown malts. Chewy in the back end with a funky and earthy yeasty finish. It's good, the malt profile begs for a cleaner yeast. The acidity and funky Brett character seem disjoint from the rest of the beer.
