Collaboration with Invasive Species Brewing.

We brewed this wild ale with our good friends at Invasive Species on November 1st, 2018. We used a combination of Pilsner malt, wheat, flaked oats, and a plethora of aged hops. Then we aged this brew in one of our 500L French Oak puncheons with our mixed culture, before adding Florida Indian River Peaches and raw Orange Blossom Honey from Loxahatchee. Fleshy peaches dominate the aroma and flavor with nuanced notes of citrus honey, Brettanomyces funk, and a tart finish.

750 mL bottle. Pours mostly clear golden. Big white head that settles quickly. Smells of stone fruit acidity and oak. Tastes of stone fruit sourness and lots of oak. Lots of oak. A little honey in the back end. Moderately strong sourness. Almost too sour for me. Sourness is the primary flavor, which isn't my favorite thing. Makes it a little tough to enjoy.
