We decided to make a beer with the most fruit we can without a winery license. This beer has more than 8 pounds of fruit per gallon of beer.

We blended a couple of barrel aged, Lambic-inspired wild ales and refermented on top of an absurd quantity of organic sweet dark cherries. Even the foam in this beer is the color of cherry juice, and the potent aroma of cherry preserves and jam are unmistakable. While this beer is all about the fruit, our mixed culture provides some funk and pleasant acidity.

750 mL bottle. Deep red and fizzy for a brief moment. Smells of cheesy funk, slightly sweet cherry, and oak. Very nice. Tastes of cherry and light vinous acidity. Oak. Deeper sour flavors, but never too much. Oak lingers. Medium body. Smells wonderful. Taste is a little less dynamic, but still very nice. I expected it to be more intense, but it's pleasant.
