This spontaneous beer was inoculated with the ambient microbes found outside our brewery on January 3rd, 2018. Fermented and aged nearly two years in a Sangiovese wine puncheon before refermenting organic black raspberries. Pours saturated violet in color with lively notes of Pinot Noir grapes and blackberries with a side dish of Brett funk and French oak tannins.

375 mL bottle. Looks great. Looks like red wine with a deep purple head. Smells of blackberries and raspberries, dark fruits, yogurt acidity. A touch of cheesy funk. Tastes of blackberries and raspberries with moderate dark fruit acidity. Vinous notes. Some oak and a little dried grass. Medium body. Moderately sour. It's dominated by fruit, but it's very tasty.
