This is our first 100% spontaneous beer, which was inoculated with the microbes found outside our brewery on January 3rd, 2018. Fermented and aged in French oak puncheons and then naturally conditioned in the bottle. We performed a traditional turbid mash with a grist of imported Pilsner and domestic raw wheat, and boiled with aged US Liberty hops. This beer delivers notes of honeydew melon and overripe tropical fruit alongside subtle notes of stone fruit, mellow funk, and soft acidity.

375 mL bottle. Pours hazy golden. Smells of melon and French oak. The label says honeydew melon and that's exactly what it smells like. Tastes of the same melon flavor with dried grass, oak, herbal aged hops. Hints of stone fruit. Lingering melon flavor. Moderate sourness. Hits the nose a bit. Medium body. Outstanding.
