Biere de Coupage is our Solera style wild ale that contains portions of our very first batches. Approximately half the batch is Spelt Saison barrel aged one year, while the other half is a blend of various Saisons and wild ales aged 2-3 years. Notes of cedar, sandalwood, and lemon rind lead to our signature funk with refreshing acidity. This beer is all about Flavor from Fermentation.

375 mL bottle. Clear golden. Smells of herbal hops, lime acidity, a little oak. Tastes of bright lemon acidity, oak, cracker malts. Earthy yeast in the back and finishes with a strong mineral flavor. Medium body with moderate sourness. Simple golden sour. Just below the boundary line of too sour, but I also have a low tolerance. It's fine.
