We brewed this wild ale with Pilsner, spelt, and raw wheat, along with aged Liberty hops and fresh Czech Saaz. We fermented with our mixed culture on top of sweet cherries for two months before aging in French oak barrels for two years. A melange of stone fruit aromatics leads to faint cherry notes on the palate. Bright acidity and oak tannins lead to a clean finish.

375 mL bottle. Pours clear golden. Smells of oak, light cherry and stone fruit, herbals. Tastes of very light stone fruit and something like cherry, but maybe it's only from the nose. Lots of oak. Earthy yeast and bitter notes. Long stone fruit tart finish. Medium body. Pretty nice.
