This Lambic-inspired wild ale spent 14 months in French oak puncheons before transferring onto 300 pounds of fresh starfruit sourced from our bartender's neighbor. We rinsed the fresh starfruit by hand and sliced it into small pieces before blending 100 gallons of beer onto the fruit and letting it referment for six weeks. The starfruit lends subtle tangy and tropical aromatics along with notes of white grape and pear. The finish is smooth, tannic, and oaky with soft acidity and our signature Odd Breed funk.

The nose is dry and loaded with Brett funk; the starfruit really comes through with subtle notes of tropicality & green apple. Palate brings an almost champagne-like experience - dry, effervescent, w/ notes of pear, brioche, wet hay, & funky white wine.
