Aroma is cinnamon, apples/green apples and a hint of cardamom. The flavor is cinnamon, crisp apple pie/green apples, malts and a tart/mildly sweet finish.

Notes via stream of consciousness: Collaboration beer with Graft. "N.Y. apples, Madagascar vanilla & Ceylon cinnimon [sic]". It's poured a very hazy golden-amber in color beneath a short head of creamy white foam. The cinnamon is clear in the aroma, but not strong, and the apple and vanilla back that. It's pleasant and enticing. I often expect spiced beers to be heavy on the aroma side, almost like a Yankee Candle store, but that's not the case here. The flavor delivers much more apple although the vanilla and cinnamon remain. Thankfully the cinnamon is kept in check and I'd say that the balance between the three is about as good as you can get. The malt is basic, just lightly biscuity, and acts as a stage for the apple, vanilla, and cinnamon. In fact, there's a little bit of acidity to it, and to a certain extent it seems more like fresh apple cider than beer. The bitterness is kept minimal, and yet it finishes dry due to that acidity with the cinnamon and vanilla lingering. Looking back the head never really built up that much, which is at least partially due to it's moderate carbonation that leaves it smooth, and yet the lacing left behind is fairly good. In the mouth it's medium bodied, dextrinous, and smooth although the acidity does give it a little bit of a bite. This is a great fall beer! I wish I'd had this for Halloween night, but unfortunately I screwed that up. Still, this would be great with Thanksgiving dinner, any cool night on the porch, X-mas dinner, and even a cold winters day. Based on the balance, this is one of the best spiced beers I've ever had.
