Into the Great Unknown is our dry hopped series of lambic inspired’ beer. We start out by blending 9-14 month old barrels, then dry hop in the blending tank with a specific variety of hops (in this case Mosaic), and bottle condition with wine yeast for at least three months. Aromas of tropical fruit from the hops blend nicely with the funk and acidity of the underlying blend.

one of the better american wild ales i have had this year, and thats really saying something. a neat blend here, sort of a lambic style base beer, wheat based and fully funky, with a great mix of musty farmy brett and bright clean bacterial acidity that suggests lemons to me. mature and woody, but also very light and more drinkable than many of the traditional lambic types of belgium due to the lesser degree of sourness. the mosaic hops though really make this amazing. classic tropical fruit and citrus notes to the hops, but brought out a lot by the sourness. the aroma is positively mouthwatering, and the flavor is rich and nuanced, with the hops providing a beautiful fruity complexion and just enough bitterness. it gives a real mature beer some youthful attributes, fresh and growing still the hops seem to be, neat against such a dry background. carbonated like champagne, this was wonderfully conditioned, and so dry and clean in the finish. this is the kind of sour beer i like to drink, its perfectly hoppy and very complex on the yeast side of things. assuming this is the same base beer as the careful with that passion fruit edition, its amazing how different it is with the hops compared to the fruit. funky and tangy and juicy all at once. brilliant stuff!

750 mL bottle. Hazy orange. Not much of a head. Smells of light mosaic hops. A little citrusy and tropical. Missing the mosaic garlic bite. Lots of oak and a little bit of white wine fruitiness. Tastes much the same. More of the white wine character here. Less of the mosaic, even though it was already a subtle flavor. Citrus softened by oak. A little bit of astringency and malt sweetness in the back end. Medium body. Low carbonation. Subtle beer, as usual from Beachwood Blendery. Nice all around.

A: Lots of brett funk – barnyard aroma, followed by a moderately light sourness and a light berry-like hop aroma.
A: Pale straw color, super hazy, with a frothy white head that has adequate retention.
T: Lots of brett funk, followed by a moderately light sourness and light berry hop like flavor. The sourness lingers through the finish.
M: Medium bodied with moderately high carbonation. There is a light, but pleasing acidity to the beer.
O: Good; the beer is a bit too brett forward and lacks balance in the aroma and flavor. Moreover, the brett overpowers the aroma and flavor of the Mosaic hops and doesn’t allow the dry-hopping to truly shine.
