Coolship Chaos with Strawberry is the other half of our first experiment with spontaneously fermented beer. We took half of the batch of Coolship Chaos, a lambic-inspired ale blended with one year old barrels that were spontaneously fermented, and added over 3 lbs per gallon of whole strawberries!

Appearance: Moderately cloudy straw-yellow color with a generous-sized white head that dissipated fairly quickly. Nice appearance.
Smell: Moderate barnyard funk, semi sweet berries, and mild grassy/hay notes. The funk features prominently but the berries come through to make their presence known.
Taste: Tart strawberries, moderate funk notes, along with some mild leather notes. The beer is moderately sour and finishes dry and clean.
Mouth-feel: Body is on the lighter side of medium with a medium level of carbonation. Spot on for the style.
Overall; Coolship Chaos With Strawberries is another Beachwood Blendery tasty beer. Distinct enough taste profile to distinguish it from just another Wild Ale but in the vein of a true fruited lambic.

I find this beer to be whatever. Maybe something is wrong. It’s tart like the first Morman I dated in ‘01, but it’s also a lil just blah. Kind of like Jennifer Aniston post Friends.

A: Funky with a fair amount of barnyard character coupled with moderately light strawberries and moderate sourness.
A: Copper color, hazy, with a rocky white head that quickly dissipates into the glass.
T: Moderate funky barnyard with strawberry flavors, followed by a clean moderate sourness through the finish.
