Oh snap. And just like that we have a baby gusher. I’m sayin’ Raul’s beer looks like his third grade science project. But unlike said masterpiece, will this one be infected?
Nope!
Thing is riper than Jean Harlow slipping into a corset. Thing is more large and in charge than Hattie McDaniel stealing a scene. Thing is more rich and robust than Kate Upton after Verlander strikes out the side…
Raul will say it once and he will say it again: Yes, please!

More acidic than the others I've had from Beachwood. Big cherry aroma, funk, lactic, higher carbonation, cherry pie, sweet and tart cherry, mineral, lemon, oak
Overall if the acidity was dialed back, this would be in line with their other superb fruit lambic inspired beers
Improves as it warms

i actually didnt find this as traditional lambic-esque as a lot of their others, especially the careful with that series, which is about as old world and genuine as they come, but this is a really killer wild ale, maybe just a little young still, either way, delicious beer that i am thrilled to have available in colorado now. its got a nice pinkish orangey red color to it, not as intensely colored as some of their others, but a ton of bubbles even though the they build doesnt last long. the aroma is full of funk, tartness from the cherries, and oak, its vinous and acidic, but also kind of delicate to me, without being totally taken over by the fruit, the fermentation profile and the grain are still very much a part of the mix here. the flavor is like that too, with all kinds of complexity to it beyond just the tart pie-like cherries here. i get notes of rose hip and raspberry in with the cherry, as well as red wine vinegar and lemon sourness, that type of acidity here makes it not the most drinkable sour, but the flavors are fantastic and all the wood gives it a great depth. i love the beachwood funk profile, they really have it dialed in, and its on display really nicely here. im sure this will age like a champ, just like all the others have. i saw a framboise from them as well i need to get my hands on...
