Appearance; Mahogany brown in color, with a very small, coarse dark tan head, and a scattering of extremely fine-beaded lacing about the glass wall, somewhat like Belgian lacing. Patches of fat bubbles cling to the glass wall beneath the surface.
Aroma: Bitter sweet chocolate and cocoa are prominent in the aroma, as well as molasses and dark caramel. The alcohol offers an understated vinous and spicy note. A mild note of earth and smoke and wood contrasts well with the several sweet aromas. Cinnamon, while present, is secondary to the bolder aromas.
Taste: On tasting, there is an immediate surge of bitter chocolate and equally bitter cocoa, beneath which lies a gentle surge of warming and spicy alcohol. Considering that the ABV is 12.3 percent, it is both gracious and subtle, to the point of being understated. Following on, there are strong notes of wood and vanilla, followed by molasses and dark caramel. Afterward, dark roasted, almost burnt malt comes to the fore, nicely balancing the sweetness. Then there is a suggestion of dark-roasted coffee beans and finally, cinnamon. The taste finishes with lingering notes of bitter cocoa.
Mouth feel: Rich, soft and full, with slight carbonation and a fullness like that of milk.
Drinkability/notes: A really pleasant, well-crafted and warming slow sipper that seems perfect for an icy, wintry day in Central Texas.
Presentation: Packaged in a standard twelve-ounce aluminum can, bottled on 02/26/2018, served in a La Fin du Monde tulip.

Poured from a can into a snifter
Appearance – The beer pours a deep brown, nearly black color with a one finger head of brown colored foam. The head fades rather fast, leaving just a trace of foamy lace on the sides of the glass.
Smell – The aroma of the brew is massive of a deep roasted malt smell mixed with big aromas of cinnamon and chocolate. Along with these aromas comes notes of coffee and a decent showing of molasses and caramel. Along with these smells comes notes of crème and vanilla as well as a touch char and smoke, producing a very roasty and toasty and dark aroma overall.
Taste – The taste starts out with a very roasty and taosty malt flavor that is big and bold. Along with the malt comes a moderately sweet flavor that is a mix of brown sugar and molasses. Right from the start there is also some dark chocolate as well as a touch of crème and milk. The former of the two get stronger as the taste advances all while some cinnamon comes to the taste as well. The sweet is all the while fading a tad, while the roastiness of the brew intensifies and is complimented by a bit of char. With a touch of wood, and a surge of brown sugar, one is left with a nice roasty and very pleasant chocolate/cinnamon taste to linger on the tongue.
Mouthfeel – The body of the brew is very thick and creamy with a carbonation level that is rather low. For the big roasty tastes mixed with the nice cinnamon/chocolate mix, the feel is great and makes for a nice slow sipper roasty dessert like brew.
Overall – A big and roasty brew with a nice cinnamon/chocolate/sweet flavor that is by no means cloying. The fact that this brew is 12.3 % abv, but yet does not show big alcohol taste makes it rather dangerous.
