To celebrate our 100th brew (and our 10th Double IPA), we wanted to create a luxurious beer that's rich in flavor and flush with hops. Dry-hopped with Cashmere and Mosaic, the only name befitting this extravagant libation is...

Growler filled about 2 weeks ago
Big creamy fluffy head fades slowly thick lacing, hazy orange colour
Nose big fruits and citrus, orange candy, citrus marmalade, little apricot like stone fruit and some tropical especially pineapple, sweet malt
Taste mild sweet malt, candy sweet malt, big hops, little spicy big fruit, citrus, pineapple, grapefruit orange marmalade, candy stone fruit, papaya, mango, juicy tropical, a bit earthy and spicy late, hint of booze as it dries on the finish, touch sticky
Mouth is med bod, little heavier, decent carb
Overall a very well done dipa, very little booze, somewhat sweet but enjoyable sweet, nice hops, another winner

I visited the brewery yesterday (travelled from Springfield), and grabbed a couple 22s to go.
Funny thing is, the brewery is attached to a restaurant that's on my hit list, and while the website probably mentioned this, I didn't put two and two together until I got there. So, imagine my surprise when the GPS had me pull into the Peppercorns parking lot. Peppercorns falls on a lot of top-ten-restaurants-in-Worcester articles. We had chosen another restaurant due to picky-eater issues...but, be assured, I will be back (and, soon).
I was there, looking for cans of Baccus to take home...but that one was out, and Cash Money was in. Ok, no problem.
Let's just cut to the chase: I liked it. Almost loved it. This one is not an IPA that I'm used to drinking...maybe, it's more west coast? maybe it's more old school? I'll have to say that it came across a little rough and tumble to me, at first. It's a big beer, at 9% and 100 IBU....but, it's not boozy. Its a joy to drink...seems like it would go well with a burger or steak.
Hoppy, but not fruity. Hazy, but not super hazy. Kind of dark orange in color. This is a beer that grows on you.
Final thoughts - I'd love to see this one in cans, offered as a guest can, available at some Hampden County brewery can releases. A collaboration would be awesome, too. The Pioneer Valley area of western MA should be introduced to this beer. Hell, Worcester is only an hour away...I've added it to my "territory" of where l go to buy beer. And, I'll pass on a good word to the keg buyer at Smith's Billiards, in Springfield...I'm sure it would do well, there.

Picked this up at the brewery.
A - Poured into my Duvel tulip a nice light honey hue with just a little bit of chill haze to it along with a super creamy two finger head (thanks to a nice raised pour) that fades to leave a dense, creamy one finger blanket and loads of sticky side lacing.
S - Aromas of decent citrus, tangerine, super super subtle peach notes. Flash of subtle earthy hops courtesy of the mosaic along with some light lemon notes.
T - Taste is much more assertive than the nose. Enormous hit of lime up front along with tangerine peel. Really bright almost exotic citrus notes with flashes of tropical notes as well. Swear I get a little flash of coconut every now and then. Thankfully the mosaic does not bring any vegative notes, just the usual earthy hop thing going on. No alcohol on this one, which is very nice. Finish is surprisingly not as bitter as I expected.
M - Mouthfeel is lightly carbonated, crisp, the the body is a bit on the lighter side. Alcohol is hidden very nicely though.
O - Overall this was a very fun DIPA. The Cashmere brings all sorts of interesting flavours to this beer. Definitely a tasty DIPA with a top notch appearance. Glad that the ABV isn't noticeable on this one.
