Excellent head production; good retention. Very attractive beer.
Nose is ... really something. A ton of peppermint, almost drowning out anything else. There's a bit of booze and oak, but nothing clearly identifiable as bourbon. Bitter chocolate - perhaps.
A bit confused on the palate. The peppermint is still quite strong, but not as overpowering as it is on the nose. At the same time, it brings a vegetal, earthy, almost dirty aspect to the proceedings, as well. The bourbon doesn't kick hard until the back half, but when it does, it brings little in the way of sweet or sour mash, instead bringing a vague, oaky booziness, similar to its minor presence on the nose. Bitter chocolate on the finish; a bit of chocolate up front, as well.
Thin bodied for an imperial stout. Quite drinkable; a bit of boozy sting, but nothing that detracts overall.
This one is a mixed bag. It's not bad by any stretch, but the peppermint is overpowering, and it would greatly benefit from some sweetness and a much heavier malt base. A beer like this should more properly clock in 12-14% ABV to get the full range of flavor from the additives without them standing out awkwardly.

Tar black body topped with a dense, creamy light brown head; nice partial rings of foam inside the glass. Heady note of peppermint greets the nose; some chocolate and cocoa in the background. The taste is a wild mixture of mint, milk chocolate and whiskey; menthol. Heavy body; velvety with boozy heat interacting in a strange yet wonderful way with the peppermint; nice residual sugar feel; moderately heavy sweetness on the palate.
This is one beer that could have done better by not staying in the bourbon barrel so long. The peppermint is nicely done, refreshing and unique. However, it the barrel aging is a bit strong and, in my opinion, detracts from the beer as a whole. It is not terrible or undrinkable, but it may have been balanced with less bourbon presence.
