We took our classic saison and soured it then aged it for four months with our house Brett blend. We then put it onto almost 3# per gallon of apricots and let it sit another month before bottling. Super juicy, like biting into a ripe apricot, sour but not enamel stripping sour, low to medium funk.

Appearance: Pours a hazy goldenstraw with a two finger head that leaves plenty of splashy lacing
Smell: Cracker malt, apricot and barnyard funk
Taste: Funky apricot tones build, from the outset, with a crackery base building, underneath; bitterness builds, through the middle, to complement the tart fruit flavors; the funky tart aspect wins the battle, however, in the finish
Mouthfeel: Medium body with moderate to high carbonation
Overall: A lot of nuance with the apricots here; time has enabled the Brett to work its magic

Bright orange, hazy body with a small, fizzy head. Aromas of apricot and yeast. Overall, the aroma is subtle, even a bit weak. Apricot emerges more so in the flavor. A hint of funk, soft fruitiness. Light to medium in body with soft / low carbonation. Pretty good.
