A refreshing Belgian style wit with the addition of 10# of locally grown Thai basil from our friends at Rayburn Farms. The basil gives a floral almost licorice character which blends nicely with the fruity yeast blend.
This beer is dedicated to Terry Riley, our favorite avant grade composer whose invention of tape delay created some of the most psychedelic music of its time.

A: Pours a lightly hazy medium to dark straw yellow in color with moderate to heavy amounts of active visible carbonation rising quickly from the bottom of the glass and faint pale golden yellow highlights, The beer has a three finger tall fizzy, sudsy, foamy white head that slowly reduces to a medium to large sized finger thick cap in the center of the glass surrounded by a large patch of thick film and a thick ring at the edges of the glass. Moderate amounts of lacing are observed.
S: Slightly stronger than moderate aromas of thai basil over light aromas of wheat malts and just a hint of yeast.
T: Upfront there are light to moderate flavors of wheat malts. That is followed by slightly stronger than moderate flavors of thai basil with just the slightest hint of spiciness (as I would expect). Light hints of yeast flavors and hints of lemon peel citrus as well. Minimal amounts of bitterness in the finish which fades away fairly quickly.
M: Light bodied with moderate amounts of carbonation.
O: I really enjoy Thai food and the moderate to strong presence of thai basil in this beer really wants me to order some fresh summer rolls and pad thai to pair with this beer. Very enjoyable if you like basil, especially the thai variety. Slightly one dimensional but I did not have a probably finishing the entire bomber of this beer, though it did make me hungry.

Poured into a teku pint. No freshness date.
A- Pours a slightly hazy light golden color with a full inch of white head that retains well before becoming a thick ring around the edge of the glass and a half sheet of sheer surface foam. Not-so-resilient lacing leaves small clots behind.
S- Super basil with some yeasty phenols coming along for the ride.
T- Lots and lots of basil with the yeast complementing the flavor quite nicely with a bit of spice.
M- Lively and bright with medium carbonation and a light body.
O- So I love basil, but this was a bit tough for me to finish my approximately 12 oz pour because of the one-dimensional onslaught of basil. My advice: share your bottle and pair it with some food to tame the basil monster that is this beer.
