After our Mixed Berry Sour beer was taken off the fruit I couldn’t bear just dumping all that fruit down the drain. So…we brewed up a petite saison and let it ferment for a week with the fruit and all the coolship-sourced wild yeast that was mixed in with it. Then we added our house saison blend and let that work its magic for a few months.
The color is fantastic and the head retention is surprisingly good. Definitely tart and venturing into “sour” territory, beautiful berry character with just a bit of funk mixed in. We couldn’t be happier how this turned out and hope you enjoy it as much as we have been.

Aged 6 years.... longer than intended, but I was still impressed by this.
Clear rose gold with a sticky, frothy off-white head. Nose is barnyard funk, wet hay, flowers, mellow muddled berries, and soft caramel in the back. Flavor has a much stronger berry presence, though surprisingly not acetic or overly tart with age. Earthy berries and faint granola. Softer than expected, still with a prominent tartness, dry and very drinkable. Lovely.

appearance - pours ruby red with white airy head no lacing
aroma funk and light strawberry/cherry and some wheat
taste is very light fruit slightly tart with a hint of funk
light bodied well carbonated hint of dryness
overall I really liked this wish there was a touch more juicy berry flavor.
