Belgian quad double aged in second use whiskey barrels (the first were Wild Turkey barrels that previously held Imperial Stout and the second were Elijah Craig barrels that held barley wine) along with our house Brett culture. Then we aged it on a modest amount of sweet cherries.

Picked up a bottle at the Appalachian Vintner in Asheville 12-7-22 for $15.99. 2022 bottle consumed 10-17-23.

Beer poured reddish brown with a smallish head that dissipated quickly.

Nose is nice with notes of the wild yeast at work but in the end gives way to the cherry adjunct.

Taste is good as the huge malt base gives us a wild cherry forward flavor profile. Bourbon barrels work only in a supporting providing a touch of heat and to balance the huge malt base. Finishes with a nice touch of wild cherry.

Mouthfeel is medium bodied and fairly smooth.

Overall this is a nice beer but the adjunct and wild yeast disguise any notes that the base beer yeast might have given the taster. With that said i wonder if the great Mike Karnowski has a base Quad that he puts out on occasion as i would love to try that.

Reddish brown opaque body, tan head that settles into a thick collar. Smell smacks of sour cherry and whiskey, with brown sugar, date, brett and oak supporting. Taste is even more wild: tons of cherry, brett, sour plum, whiskey, leather, date, dark oak, with baking spices in the background. Cordial like feel, sweet, then takes a turn into dry bretty funkiness, then finished as a lightly oak sour. A unique beer that worked for me with Christmas dinner
