Rye whiskey barrel-aged wheatwine with raspberries.

You may be asking what a Wheat Wine is. Well, putting it simply, its a strong ale (13%) made with a large percentage of wheat. Think Imperial Wheat Beer, sort of? We brewed this beer with predominately malted wheat from Carolina Malt House and at the end of fermentation we added pureed red raspberries letting them ferment to completion. After fermentation we aged the beer in a small format Rye Whiskey barrel until it presented a smooth drinking fruit beer with complexity from the oak and previous spirits held in the barrel. Aged about a month in the bottle and keg to round it out. Don’t be afraid, this is a delicious sipper and quite unlike anything we have made before.
