Imperial stout and bourbon-barrel-aged imperial milk stout with coconut and coffee
Court Shoes Only was created to benefit Acing Autism tennis programs for individuals with autism. When Ben from Divine Barrel asked TJ to help design the base recipe for fellow Charlotte brewers to add their own twist, we jumped at the opportunity! Together with dozens of other breweries we have banded together for this good cause.
We would be remised however if we didn’t make it our own, and its a real mouthful. We took stock from a beer we brewed over a year ago that aged in a wine barrel. This particular wine barrel was a previously held renowned Phifer Pavitt Cabernet, then was used to finish 10 Year George Dickel Tennessee Whiskey for 18 months. We blended this barrel aged beauty with a fresh stout creating a thick base to work with. We then aged the beer on fresh coconut and counter culture coffee. We get a marriage of chocolate, coffee, coconut, dark fruit, and bourbon. We’re super excited about this one!

A: Pours an opaque yet still clear thick viscous jet black in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and faint dark cola brown + dark chestnut + dark garnet red colored highlights. The beer has a two finger tall dense creamy foamy dark mocha head which reduces to a medium thick ring at the edges of the glass. Light amounts of lacing are observed.
S: Moderate to strong aromas of roasted + dark + chocolate + caramel malts with moderate amounts of brown sugar + dark fruit (plum + fig) + caramel sweetness. Moderate aromas of toasted oak + vanilla + bourbon as well as vinous/red wine. Moderate aromas of coffee + toasted coconut. Hints of earthy hops.
T: Upfront there are moderate to strong flavors of roasted + dark + chocolate + caramel malts with moderate amounts of brown sugar + dark fruit (plum + fig) + caramel sweetness. That is followed by slightly stronger than moderate flavors of coffee + toasted coconut. Next there are moderate flavors of toasted oak + vanilla + bourbon as well as vinous/red wine. Finally there are hints of earthy hops. Light amounts of roasty bitterness which fades away leaving lingering bourbon + red wine flavors.
M: Just shy of full bodied with moderate amounts of carbonation. Smooth with a light amount of alcohol warming in the finish.
O: Drinks pretty easily considering the strength (though this is more of a slow sipper for me) and the alcohol is pretty well hidden with a full mouthfeel with light alcohol warming. Lots of complexity in the flavors and aromas from the barrel aging and additions of coconut + coffee.
