Epistrophy is a strong, dark and contemplative take on one of our favorite styles, Biere de Miel. Brewed with local wildflower honey from Autumn Morning Farm in Barre, fermented with mixed cultures including Brettanomyces & Pediococcus and aged 12 months in Bourbon barrels. Deep ruby in color, featuring flavors of tart cherry, charred oak, toasted nuts, leather and unsweetened chocolate.

Poured from a 500ml bottle into a Teku glass.
Look is a slightly reddish brown with a thin off white head.
Aroma is a sour funky blend.
Taste is a funky blend of sour and yeasty.
Delicious.

Poured from a 500 ml bottle into the test glass
A - Dark cedar colored, opaque with some refined carbonation hiding in there. A thin white cap can be produced, but leaves quickly.
S - Tart dark cherry, light toasted oak, some dark fruit, raisin, plum.
T - Think ode bruin, dark cherry, sharp acidity, beautiful bourbon barrel kiss, vanilla, and a sweetness possibly that honey added.
M - Medium in body, carbonation is gentle but helps move the sweet. tart flavor package to the finish line.
O - A very fine offering from Honest Weight, the tart dark fruit flavors blend well with the barrel touch.
