They Reminisce Over You is our Rye Old Ale. Brewed with a blend of Pale and Maris Otter base malts along with Danko and Chocolate Rye from our Friends at Valley Malt, as well as British Amber and Crystal malts. T.R.O.Y. pours a brilliant deep orange color with hints of ruby. It’s flavor starts with bright spicy rye and finishes with notes of toffee, toast and a bit of warming alcohol. Post fermentation, we aged this version for 5 weeks in freshly emptied Bourbon barrels. Decadent and delicious.

Pours way over carbonated, 90% of the goblet is foamy head, that never fades, a bit rocky, sticky lacing, semi hazy semi clear auburn reddish orange color
Nose brings big vanilla and oaky barrel, with a nice raw whiskey component, some caramel and fruity rye, light almond, smooth alcohol, candy malts, little nutty toffee candy
Taste brings sweet malt out front, candy malt with nutty toffee, caramel, little butterscotch into vanilla and buttery oak, with light bourbon, mild dried fruits and fruity rye notes, smooth alcohol getting a tad fusel, rich chewy caramel late, drier mild sticky finish mild hot alcohol and plenty of sweet candy malts, but also a little spicy earthy hop bitterness
Mouth is fuller bod, little chewy rich, way over carbonated, distractingly carbonated, light warming alcohol
Overall mixed, good beer but light flaws, mostly the carbonation and sticky boozy finish, barrel was great on the nose but lesser on the taste

From the 500ml bottle, dated 02/14/17. Served in a snifter.
Pours a rich, nearly opaque, honey-caramel colour with a full finger of silky-soft, bubbly, off-white fluff. Retention on the order of five minutes while I let it warm up a bit, ending with a fat ring of merengue around the glass. This is one very pretty beer.
Sweet, vigorous nose of stewed prunes and porridge, bitter leaves and a slight metallic tang.
Taste follows the nose, thick, creamy porridge and dried, booze-plumped prunes and figs with bitter, leafy herbs keeping it from getting all sticky. The bourbon doesn't come across as boozy but more like cranking up the volume on the fruitiness while adding a little vanilla bean and smoke.
Feel is smooth, creamy, and mouth-coating, medium-thick bodied with gentle carbonation. One hell of a mouthful of beer.
Overall, well, I'm just going to give myself a few minutes here because I'm tempted to just go hurling fives around all over the place. Maybe I've been drinking too many IPA's and needed a change-up but this punched the fuck out of all my buttons.

A - Dark walnut color, gently carbonated, a thin cap recedes leaving a thin ring of proof.
S - Some notes of Vanilla, dark roast malt, milk chocolate, mint hides in the background.
T - Lightly smoked malt, bourbon thinned out extracting the deep barrel notes,
M - A bit thin, gentle across the palate, with a wonderful toffee thread.
O - A delightful offering from talented brewers. Worth seeking out.

Enjoyed at the brewery.
A - Poured into a stemmed tulip a nice clear chestnut hue with a two finger light tan head that fades to leave thick lacing and light blanket.
S - Aromas of nice toasty caramel, light toffee and toasted grains. Light sweetness. The bourbon adds a little vanilla and nice lightly sweet bourbon.
T - Taste is similar to the nose, very mellow caramel, light toffee, very faint hop bitterness. The sweetness is very subtle. The bourbon is nice and smooth though with even more caramel.
M - Mouthfeel is lightly carbonated, slightly crisp though a bit on the thin side. Alcohol hidden nicely.
O - Overall this is a very solid old ale. Rather subtle and balanced, the bourbon resulted in even smoother beer.
