Sun Structures is a traditional Belgian witbier brewed with raw and malted heritage wheat, alongside a clean, bright pilsner malt. Whirlpooled lightly with dried, bergamot peel (bergamot is a native Italian citrus with a hereditary lineage back to Meyer Lemons and Valencia Oranges, used primarily for medicinal purposes and also fragrance), and Indian coriander. Co-pitched with an abbey and saison yeast, bottle conditioned with two types of Brettanomyces and a final saison strain). Expect bright floral aromas of fresh lavender and sharp bergamot oil, backed by brett funk and a classic saison presence.

Cloudy straw yellow color with a decent and lasting white head with some very nice lacing.
The aroma is wheat, coriander, bergamot citrus and floral - lavender?
The taste is tart bergamot, wheat, coriander, funk and very floral lavender. The finish is dry with lingering coriander and bergamot.
The body is light/medium, plenty of nice carbonation, very drinkable.
Altogether, this is a peculiar but enjoyable take on witbier or saison. The tart combination of bergamot, coriander and lavender may not be for everyone, but I found myself enjoying it. Certainly worth a try, very nice.

Taste is complex wheat ale, with the wheat malt being the base, with other flavors of bitter orange, lavender floral, and coriander spice. Expresses the wheat tang, along with sour citrus and spice. Dryness in the aftertaste allows the bitter orange and coriander to blossom.
Medium mouth feel, with a mouth coating. Dry finish. Juicy but dry. Very good carbonation.
Better made wheat ale with added flavors of bitter orange and coriander makes for a well balanced taste profile.
