Pocket Cowboy Cerveza is a Mexican style lager using flaked maize in the malt, the perfect amount of noble hops for a crisp bite, and a simple easy to grab name. This beer is light, tasty, and pairs great with Taco Tuesday.

decent little beer, not sure how fresh my can is, some light oxidation to it and even perceptible hop fade type character even though this isnt really hoppy beer at all, still its refreshing, if a bit different than the expected norm for a mexican lager like this, dusty dry almost european pils notes to the grain side of it, which is not always the case, definitely less neutral on the malt than many of its peers, and not taking sweetness from the corn to my nose or tongue, although the actual flavor of corn is appreciable when this warms a little bit. i get some pretty high minerality from the water that keeps it grounded, a little doughy thing from the ferment which adds depth, and a dry fastness that keeps it palate cleansing even though its more flavorful and honestly a little weirder than expected. high carbonation is wonderful in this, keeps it flowing fast, and there is some faint citrus at the end before it turns just a little bit metallic and maybe old. the branding is cool on this, it should work for them, everyone loves a mexican lager, but for me there are way better examples of the style here locally, much as i appreciate this for being a little unique in a samey space, there are some odd aspects at play and i hoped for a little cleaner beer overall. i think these guys have made strides, but i would not rank this among their best. good as pizza beer though...

Clear, pale gold colored body. One finger of white head when poured becomes a thin cap. Leaves behind some short squiggles of lacing.
Aroma of toasted corn and a bit of spicy hops.
Taste is toasted corn with a sweet touch, grassy hops, and a bit of bitter bite. Corn lingers in the aftertaste.
Medium mouthfeel. Crisp and clean profile and finish. Good carbonation.
Good for food pairing with pizza or tacos.

Seeing someone posted this as Vienna Lager is in agreement with my thoughts.
Perhaps as the pioneers had done so once upon a time, I kept this single can in my sleeping bag overnight so it would not freeze. I slept in gratefully and gave the can a short 15 minutes in the snow.
I wasn't able to smell much being how cold the air was, and drank straight from the can.
I expected the usual, perhaps salty, and sweet corn cervezas that are the norm in craft.
There is very little corn that I could taste, and while the beer was warmer than my hand, the flavor was like hop water, indeed something like pilsener.
Discovering this made me immediately to imagine Imperial Mexico, perhaps a stock of pioneers similar to the ones of Montana. An Empire of romances with knights and castles, made more romantic for being so short-lived.
Highlander ought to develop this some more. It is good, and under different conditions, I ought to explore it better.
