The west coast version of Simcoe, Strata and Mosaic contrast IPAs. We have been dying to put a big dose of Strata into a west coast IPA for ages. We feel that it is a perfect hop for the style with lots of dank and pink grapefruit.
Playing together with Simcoe and Mosaic you get lots of citrus, pine and some tropical fruit notes dancing on top. Brewed in the old school way with a high bitterness but balanced with some crystal malts to create a proper, bitter sticky west coast IPA that has the structure to hold up to the hop assault.

Pours a cloudy, golden amber coloration with a medium, fluffy head and slightly visible carbonation. Smells of biscuity, slightly caramelly malt and citrus/tropical hops, with notes of grapefruit and passion fruit, as well as just a hint of pine. Taste is a good balance of biscuity, slightly caramelly malt and fruity, herbal, slightly dank and resinous hops, with citrus and tropical notes of grapefruit and passion fruit, as well as hints of herbal weed and pine. Finishes with a medium bitterness and some grapefruit and pine lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
The brewery claims that Strata is a perfect hops for WCIPAs because of the dank, grapefruit notes, but to me a WCIPA is supposed to be bitter and resinous more than anything else and while there is some of that to this, it feels a little half-baked to me overall. Also, Strata is much more about passionfruit than grapefruit to me, maybe Centennial would have been a better fit, or Chinook, for that matter. I like Strata, but to me that belongs in NEIPAs, not WCIPAs. Anyway, this still makes for a nice, kinda old school IPA with a modern twist from the Strata. Could be more bitter and resinous, but still a welcome change of pace from the endless NEIPAs, with a decent malt backbone as well.

De Labirratorium. En copa Shaker de Garage. Estudiando. Sensación ligera en boca, que en ocasiones recuerda a una lager. Antes de que te des cuenta se ha fundido. No obstante le falta algo de expresividad.
