For this iteration of our Belgian Dark Strong Ale, we used oak barrels to mature the beer with the main fermentation duties being carried out by our native New England mixed microbe culture. An opaque ruby-brown with mahogany lining, Sour Cherry Wild Sinister Kid emits a deep, formidable nose displaying rich aromas of fresh pie crust, muddled cherry, cinnamon sticks, vanilla bean and fig with a touch of bourbon and cedar. Complex notes of date and light raisin build upon the flavors laid out by the nose with hints of toasted walnuts and caramel apples. Finishing dry with a light to medium body, this dark sour ale was re-fermented with 1.5 pounds of sour cherries per gallon resulting in an enhanced layer of delicate tartness.
