Permutations 8 is a blend of barrel-aged and stainless conditioned beer fermented with our Native New England culture of yeast and bacteria, aged atop sour cherries. The resulting aroma screams of tart cherry, almond, and wet hay funk. The palate is moderate-to-heavily sour, contains cherry and rhubarb flavors, with a dry finish.

750 ml bottle, Drank on October 13, 2019.
Aged quite well, nice smell - not too strong but you could smell the tartness and cherry, and the funk. Poured with a little head that settled out, nice clear orangey color. Taste followed the nose but was more distinct - quite acidic and tart as per Trillium's yeast culture, but not way over the top. Very tasty at room temperature when not in a rush to drink (!). Was surprised the cherry was still so predominant. Good beer but shy of mind blowing.

Hazy, mauve appearance. A small, fizzy, light pink crown topped the liquid but it quickly dissolved. Minimal lacing. Droplets trickled down the glass.
The nose was quite tart and funky. Very Brett forward. Fairly musty. Vinegar was noticeable. Slightly fruity. Berry notes were detectable. As the beer sat, the sour cherries really came forth.
The flavor profile was super crisp and tart. Loads of lemon and red wine vinegar. The beer was anchored by a crackery malt base. Bit of sour cherry in the center. Definitely less than in the nose however. The beer became even more tart and acidic as it moved along the palate. Super lemony. The beer finished tart and dry with notes of lemon zest and oaky tannins.
Nice lighter bodied, fluffy mouthfeel. The liquid contained a super fine, moderate effervescence. Lively and sprightly on the palate.
When I love Trillium's hoppy beers and coffee-infused stouts, I find most of their sour program offerings to be solid but nothing to write home about. This was an enjoyable beer for sure but pricey at $25.

My wife ordered this today in Canton even though she dislikes sours (she liked the thought of it aging on cherries). I loved it and so did she, which is saying a lot because like I said, she really dislikes sours!
