Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew.
For this edition, we present a complex smokey sour. Dark amber in color, this wild ale aged in bourbon barrels is an incredible marriage of influences from characterful malts, oak, and expressive yeast. The nose brings aromas of mezcal, cherry pipe tobacco, and vanilla. Once sipped, flavors of baking spice, tart cherry, and bourbon arise, along with a light tartness and warming finish.
MALT: American 2-Row Barley, Valley Danko Rye, CaraRye, C-120, Turbinado Sugar
HOPS: Sterling
Up to 22 cases (264 bottles) of Permutation Series Number 9 may have been mislabeled with a different beer (Cranberry Soak) that has not finished conditioning.

Pours slightly hazy red amber with a dense creamy off-white foam head. Smells like tart cherry, toffee, toasty caramel malts, oak, bourbon, slight vanilla, leather, pipe tobacco, spice, with floral earthy herbal grassy pine. Tastes like tart cherry, toffee, toasty caramel malts, oak, bourbon, slight vanilla, leather, tobacco, sweet spice, with floral earthy herbal grassy pine. Feels medium bodied, creamy with moderate smooth carbonation. Overall a really nice and balanced amber wild ale aged in bourbon barrels.

Had on tap. Pours hazy, amber gold in color with minimal head. Taste is oak, vanilla, caramel, and sour mix. Moderate carbonation, medium bodied, nice combination of sour and sweet. The sour mix here is not as aggressive as in some of the other Permutation series. This almost tastes like a mix between a sour and a light English barleywine. The levels of caramel malt in this one are impressive. These days it is not often that I find a beer that I cannot say that I have not tasted something similar. This permutation falls into that category however. Unique and tasty. I will get this one on tap again.
